Make this to have with tea or coffee (in one of my cups!) Delicious....

Melt in a pot 150g butter with 3/4 cup brown sugar and 2 tbsp golden syrup. Add dry ingredients: 1 1/2 cups of rolled oats, 3/4 cup flour, 1 1/2 tsp baking powder, 1 1/2 tsp ground ginger and 3/4 cup of coconut.

Press into 22cm x 32 (approx) tin (lined it if you want to!). Bake at 180c for 15 mins. Cut lines while still warm.

Make icing by melting in a small pot 125g butter, 3tbsp golden syrup, 5 tsp ground ginger and 2 cups icing sugar. Once melted beat hard until begins to stiffen. Pour over the now cooled base. Leave to set. Recut the lines made earlier.  Serve with a cup of tea or coffee.
